Keep digital? Or is analog ok?

Sorry for the basic question, but, am I better off keeping my signal all digital (AES/EBU - Toslink optical) than going balances in to the main board? I imagine the answer is yes, but I’m struggling to find an interface with more than 1 optical input, at most they have 2....

EDIT: adding more context, thanks guys. Interfaces: I have 2 - an Apollo Twin Duo Thunderbolt and a Digi003 console I no longer use.

I. Inputs (need at least 4 balanced analog inputs, 2 digital - one S/PDIF and one AES/EBU (which can be converted to Toslink), and 2 mic pres

II. Instruments: Yamaha EX5 with AES/EBU digital out, Yamaha Motif ES7 balanced analog outs, JV1080 stereo out; Kemper using S/PDIF, and need 2 mics for voice or acoustic guitar

III. DAW: mostly use Ableton Live these days but if needed I can revert to PT.

IV. Laptop: MacBook Pro 2012 i7 2.6 16GB RAM. (Still have it for the protools compatibility and FireWire capability to the 003). Eventually I’ll upgrade.
