How do you remember all those analog settings?

Like pit stops in Nascar races (how do they catch back up?), this has always perplexed me. How do you recreate a sound made by changing 35 different knob twiddlings and cord patches? Do you just remember it all? And what, when you hit 60 and your memory fades you just lose all of that information? I'm frightened and confused---hold me.
